Why is cold-pressed oil better than hot-pressed oil?

Cold-pressed oil retains more nutrients and antioxidants because they are not destroyed by heat. On the contrary, the hot method can alter the flavor and reduce its nutritional value.

What exactly do we mean by the term "COLD PRESSED OIL", what is the basic requirement of its production process and why is it considered superior in quality?

This is an oil that during the kneading stage the temperature is maintained below 25-27oC. The production process of this oil is more time-consuming and difficult, but the oil produced retains many of the valuable nutrients intact.

How is EXTRA VIRGIN OLIVE OIL defined and what are the main characteristics that determine its quality?

The most natural category of olive oil with a perfect aroma and taste. Its acidity does not exceed 0.8°. It has an intense fruity taste and aroma of freshly picked olive fruit.

What is "AGOURELEIO - THE FIRST OIL OF THE YEAR", what are its special taste and production characteristics?

The extra virgin olive oil of the first unripe fruit of the olive tree has a rich, fruity, spicy aroma and a characteristic bitter-sour taste. It is considered the best oil and for this reason growers often keep it for themselves. It is usually available in limited quantities and is harvested from the best olives. Unripe olives, picked by hand and not by beating or falling. Due to its rare "temperament", the olive oil also has a limited shelf life, a maximum of 9 months. The olive oil, rich in antioxidants, trace elements and vitamins by nature, combines superior taste with high biological value.

What are the ideal environmental conditions and what is the appropriate type of container for properly storing olive oil, so that it is protected from the factors that cause it to spoil?

To properly preserve olive oil, a clean, dark space is required, free of moisture and odors, with a constant temperature of 14-15°C. The main factors that accelerate its deterioration are moisture, oxygen, light and heat. At the beginning of storage, decantation is necessary to remove the scum that causes rancidity. Its preservation is better the more inert the material of its packaging container is. Dark, airtight glass containers are ideal, while tins, clay and PVC should be avoided.
